Mediterranean Chicken

Delicious Mediterranean Chicken
Ingredients: 4 chicken breasts, salt & pepper, 1/4 c. flour, 1/4 c. olive oil, 1-1/2 c. sliced onion, 1 c. golden raisins, 2 T. chopped garlic, 1/2 c. dry Marsala, 1-1/2 c. Roma tomatoes (seeded & chopped), 1 c. chicken broth, 1/4 c. white wine vinegar, 2 T. sugar, 2 t. dried oregano leaves, 1/2 c. pimento-stuffed green olives, 2 T. capers (drained & crushed), 2 T. chopped fresh parsley, 1 T. lemon zest
Directions: Season chicken with salt & pepper; dust with flour. Saute chicken in oil in a large saute pan over medium heat until browned on both sides and cooked through. Remove from pan.
Add onion and saute 3 minutes; stir in raisins and garlic, and saute another minute. Deglaze with Marsala, scraping up any brown bits from the bottom of the pan. Stir in tomatoes, broth, vinegar, sugar, and oregano; bring to boil. Return chicken to pan. Cover and reduce heat to medium-low to simmer for 10 minutes. Add olives and capers; Simmer until heated through.
Serve chicken over orzo. Garnish with parsley and lemon zest.
